Chilli Lasagne

My recipe for Chilli Lasagne, specifically designed because my Daughter loves it.

Ingredients

  • RED SAUCE
  • 454g Lean Mince Beef
  • 2 400g Can Chopped Tomatoes
  • 1 1/2 tbsp Tomato Puree
  • 4 tsp Garlic Puree
  • 2 Beef Oxo Cubes
  • 400ml Boiling water (Mix the Oxo's into the water)
  • 1 Red Chili
  • 3 Bird Eye
  • 1/2 Red Pepper
  • 1 Red Onion
  • 1 - 5 tsp Hot Chilli Powder
  • 1 tsp Dried Oregano
  • 1 tsp Garlic Powder
  • 1 tsp Paprika
  • 1 tsp Smoked Paprika
  • 1/2 tsp Cayenne Pepper
  • 1 tbsp Unsweetened Cocoa Powder
  • 1 dash Salt
  • 1/2 tsp Pepper black
  • 1 tsp Cumin
  • 1 tsp Ground Coriander
  • 1/2 tsp Ancho Chilli Flakes
  • 1/2 tsp Red Chili Flakes
  • 1.5 tablespoon Sugar
  • NACHO CHEESE/WHITE SAUCE
  • 600 ml Semi-Skimmed Milk
  • 50 gram Butter
  • 5 tbsp Plain
  • 3 tablespoon Hot sauce
  • 300g Medium Cheddar Cheese (Grated)
  • Lasagne sheets
  • 100g Cheese (to top)

Instructions

  1. In a deep frying pan, fry the onion for a few minutes until starting to soften
  2. Add the Garlic Puree and Tomato puree and fry for a minute or so before adding the Red Pepper
  3. Add in the Mince and brown
  4. Add the Chillis and sprinkle over all the spices and sugar, stir in the Chopped Tomatoes and Beef Stock (the Oxo cubes mixed with the 400ml of water)
  5. Cover and simmer for an hour or so
  6. Now make the Cheese sauce
  7. Melt the butter in a saucepan with a medium heat and add the 5 tbsp Plain flour to make a Roux, cook for a few minutes
  8. Slowly pour in the Milk, using a whisk to stir (prevent lumps), bring to a simmer and keep stirring until it starts to thicken.
  9. Add the Hot sauce (use whichever you like, I use Cholula Original)
  10. Turn off the heat and stir in the Cheese stirring until combined
  11. Taste the sauce and adjust, season or add more hot sauce if needed.
  12. Grab a deep oven proof dish, deep tray etc and add a layer of Red sauce/Chilli to the bottom, layer of lasagne sheets then a layer of White/Nacho Cheese sauce, Red, Sheets, White repeat until you have 4 layers of sheets then pour the rest of the red sauce over, one final layer of sheets and cover those with the rest of the White sauce.
  13. Put the dish into the middle of a pre-heated oven at 200°C for 20 minutes, remove and cover with some extra grated cheese (Any you have, I like Mozerella for the pull)
  14. Put back into the Oven for 20mins.
  15. Remove and sit for 5 minutes, cut and serve with a side salad or whatever you like

Notes

You can use Tortilla Wraps instead of Lasagne sheets if you like (my family just like the sheets)

Reduce or increase the spice to taste by adjusting the Chillies, Chilli Powder and Hot Sauce in the White Sauce.
