Arrabbiata(ish)
A recipe I created to use up some leftovers.
Ingredients
- 1 Small Red Onion (finely diced)
- 1/2 White Onion (finely diced)
- 1/4 Red Pepper (diced)
- 1 tsp Olive oil
- 4 tsp Garlic Paste
- 1 Salad Tomato (roughly chopped)
- 8 Cherry Tomatoes (roughly chopped)
- 2 Rashers Smoked Bacon (diced)
- 1 Tbsp Tomato Puree
- 454g Lean Minced Beef
- 2 Red Chillies (finely diced)
- 1 Green Chilli (finely diced)
- 1 tsp Dried Thyme
- 1 tsp Dried Oregano
- 1 Tbsp Dried Basil
- 1 400g Tin Chopped Tomatoes
- 1 tsp Balsamic Vinegar
- 1 tsp Worcestershire Sauce
- 1 tsp Tobasco Sauce
- 1 Tbsp Sugar
- 2 tsp Red Chilli Flakes
- 1 tsp Fresh Ground Black Pepper
- 1/4 tsp Fresh Ground Sea Salt
- 225g Dried Spaghetti
- 150g Cheddar Cheese
Instructions
1. Using a deep frying pan heat the Olive oil to medium high (add a small piece of onion and watch for it sizzling) then add the onion and fry for a few minutes.
2. Move the onion to one side and add the Tomato puree and spread a little over the clear part for a minute or two before mixing (mellows the tang a little) and stir in the garlic puree.
3. Stir in the bacon and Red pepper, fry for a moment or two (more if like me you use frozen bacon in which case until the bacon defrosts and starts to brown)
4. Stir in the mince and chillies and brown.
5. Make a well in the meat mixture and add the fresh tomatoes, leave to cook for a few minutes, add the Thyme, Oregano, Basil, Red Chilli Flakes, Salt and Pepper to the Tomatoes then stir everything together.
6. Stir in the tin of chopped Tomatoes and add the Balsamic Vinegar, Worcestershire Sauce and Tobasco Sauce.
7. Sprinkle over the sugar, stir and wait for the mixture to start bubbling then reduce the heat and cover.
8. Simmer covered for 45 minutes to an hour. Taste and season if needed.
9. Cook Spaghetti (or pasta of choice) according to instructions/taste.
10. Serve over pasta and grate the cheese over the top.

Notes
Use any colour Peppers, any Chillies add any veg you want.
Use any colour onions.
If you don't like spicy food reduce or remove the chillies and Tobasco.
If the Bacon or Mince is frozen just add a little extra time to ensure its cooked though (though I use frozen Bacon and Mince so you should be golden)
Make it the day before you want it for even more flavour (cool quickly in a tub in cold water and refridgerate)
Using a slow cooker? either brown up to the mince in pan then slow cook for 2 - 3 hours on high or just dump everything in and cook for 4.5 hours high or 7 -8 hours on low (only use the dump method if everything is defrosted first, just in case)
